The Best Recipe For Homemade Mayonnaise

Don’t think you’ll be sacrificing the flavors of your favorite mayonnaise with this healthier recipe. My go-to always used to be Hellman’s (called Best Foods on the West Coast), and this recipe tastes just like it!
How To Make Mayonnaise
After trying a bunch of different methods from old-fashioned hand whisking (looking at you Julia Child), the food processor method (too time-consuming) and some failed immersion blender recipes, I finally landed on this recipe for homemade mayonnaise from Northwest Edible.
Erica adapted her version from Serious Eats and I played around with it until I got it to taste like Hellman’s.
This seriously takes less than 2 minutes – no joke. You can have homemade, clean-ingredient mayonnaise anytime you want, you just need to make you have an immersion blender
Here’s how it’s done:
- Begin by placing all ingredients in a wide mouth mason jar of other tall, cylinder-shaped container. (image #1 below)
- Let the ingredients sit until the oil rises to the top.
- Place the immersion blender in so that it sits firmly on the bottom of the container. (image #2 below)
- Set it to the highest speed and turn on. Once most of the mixture has emulsified begin to move the immersion blender up and down to incorporate any oil that is sitting on the top.
- You should have thick, creamy mayo! (image #3 below)
- Place in a container with a lid, keep refrigerated and use up within one week. Enjoy!
Do you need an Immersion Blender to make Whole 30 Mayonnaise?
Nope. You could use a large bowl and a whisk but be prepared for it to take a LONG time. You could also use a food processor or traditional blender but there are a lot of variations in size and the number of ingredients may not come above the blades. If that happens, it won’t blend any or all of it.
I like to use an immersion blender because it’s easy, quick and you can assure that you are going to emulsify the ingredients from the bottom up.
Is Homemade Mayonnaise Whole30 compliant?
Only if you use compliant oils such as avocado oil, walnut oil, macadamia nut oil, olive oil, and coconut oil. Any other oils will not qualify it as a whole30 recipe.
If you ever find yourself questioning if something is Who30 compliant, it’s best to be safe than sorry, so just look it up.
It’s one of those diets that can be overwhelming at first trying to navigate which food to avoid, and which to stock up on, but trust me, once you get the hang of it, it becomes second nature.
Which Oil is Best for Blender Mayonnaise?
- Personally, I love a combination of a mild tasting, neutral oil like Avocado Oil paired with Extra Virgin Olive Oil. I have found that a 2/3 to 1/3 ratio yields the best and most consistent flavor.
- If you use all avocado oil, the mayonnaise will likely be too neutral tasting and bland.
- If you use all extra virgin olive oil, the mayonnaise will likely be too overpowering and not mild enough.

- 1 large egg
- 1 Tablespoon lemon juice approx. half of a large lemon
- 1/2 teaspoon dijon mustard
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground white pepper
- 2/3 cup mild neutral oil such as avocado or light olive oil can also use macadamia nut oil, walnut oil or other high-quality mild oil
- 1/3 cup extra virgin olive oil

Begin by placing all ingredients in a wide mouth mason jar of other tall, cylinder shaped container.
Make sure the white pepper is not clumped up and let the ingredients sit for a minute or two until the oil rises to the top.

Place the immersion blender in so that it sits firmly on the bottom of the container.
Set it to the highest speed and turn on. Do NOT pull the blender up or out, just allow it to sit at the bottom of the container. The mayo will start to emulsify and begin creeping up the sides.

Once most of the mixture has emulsified and looks like mayo (less than a minute!), you can begin to move the immersion blender up and down to incorporate any oil that is sitting on the top.
You should have thick, creamy mayo!
Place in a container with a lid, keep refrigerated and use up within one week. Enjoy!

I made a batch of this mayonaisse today, and couldn’t get it to thicken, so I tried adding 1/12 T. cornstarch, thickened by cooking in 1/2 c. hot water, but it still did not thicken. Can you tell me if I could salvage this, or should I just throw it out and start over?

I make a batch of mayo almost every single week and I’ve only had this happen one time. It was directly related to the eggs I used. Not exactly sure why but the mayo just would’t set. I did everything the same as usual. I tried it again with different eggs and had zero problem. As for adding cornstarch, I wouldn’t recommend it. Unfortunately, I would toss and start over (use different eggs). So frustrating and such a waste of ingredients!

A tip on another website said failure to set can be caused by using too wide of a container. The recommendation is to use a tall narrow jar that’s just slightly larger than the immersion blender.

I had hardly used my immersion blender until I started making my own mayonnaise–after discovering that Spectrum organic olive oil mayo has dextrose in it (when a friend was on Whole 30 and, because of the dextrose, couldn’t eat my deviled eggs). I love this recipe and the helpful photos! I have added blended preserved lemons once, and I just added a bunch of harissa, so I have a jar of spicy mayo handy. Yum!

I have always made my mayo in the food processor, doing the oil through the Shute with the hole in it. Today I made it your way with my immersion blender. I’m going to try this mayo because I’ve made the Whole 30 recipe several times and cannot stomach it. I’d rather not have mayo at all. I liked Hellman’s so can’t wait to see how this comes out. I do not have an emersion blender though, any suggestions?

Hi kristen, The immersion blender is key to making this in just a couple of minutes. You can make traditional mayo with a whisk or a food processor but it takes about 1/2 hour of either constant whisking or slowly dropping in the oil drop by drop into the food processor.

Well, lol it didn’t! I ended up going to my local Wal-Mart Bleh!! And the choice was easy as they only had a Hamilton Beach brand for about fifteen bucks. I got it and some new extra light olive oil. Presto! I have thick, creamy mayo in under 60 seconds. Thank you!!! And when the lady says you need an immersion blender she means it! ??

I just bought this exact immersion blender just to make mayo. Mine will not come together. I had an old Hamilton Beach cheapy from years ago that I threw out because it no longer pureed soup. But now I can’t get my mayo to come together. I did it just like you suggested but it didn’t work. I’m so disappointed. I was actually thinking that the new one spins too fast but you use it on the highest speed, right? Any other suggestions. I’ll try different eggs. I’ve been buying cage free free range eggs.

Hi Debbie! Oh man, that sounds so frustrating. My first thought was that it must be the eggs. I would try a different brand / type and make sure that they are fresh (check the date). Do you keep your eggs refrigerated?

Coming in really late here, but I also was aiming for that Hellman’s taste and independently seem to have arrived at virtually the same recipe as you, with two small additions: I add a little white balsamic vinegar, and a pinch of ground cayenne red pepper. You can’t really taste the heat in the pepper, but it seems to “wake it up” somehow. Aren’t immersion blenders wonderful?

Thanks for this post! My dad and I made some homemade mayo back in late winter. He being a former professional chef had me whisking it and my hand and arm never hurt so hard. Although it was good I will be trying this method next. And, I agree… Hellman’s is hands down the best store bought brand!

Wow, I was desperate for an egg salad sandwich right now, and this worked perfectly. I use Sunflower oil (as it was in my food pantry) it was delicious. I have been a “Best Foods” (West Coast Hellman’s) fan all my life but this is much easier, cheaper and tastier too. Thanks!

Hi Maggie – not really. Eggs are essential to homemade mayo. I would suggest finding a Vegan “Mayo” recipe.
