Use Spaghetti Squash to make the best Low Carb Pizza! An easy weeknight dinner that the whole family will love. Get everyone involved in the toppings!
You probably already know this but my older son is a bit obsessed with Pepperoni Pizza. Not uncommon for kids (and adults!) and for good reason.
The thing is he eats Gluten Free and while I definitely stock the freezer with our fair share of Gluten-Free pizza’s, I try to limit them to about once a week since the ingredients tend to be on the “not so real food side” if you know what I’m sayin’.
I have pretty much cornered the market on turning anything into a “Pepperoni Pizza” but this dish stands out head and shoulders above the rest.
While I originally created it for my son, it is my husband who regularly requests it.
Ingredients To Make Spaghetti Squash Pizza
Making pizza has never been easier with this spaghetti squash substitute. No need to spend time making your own pizza dough, or pay for a premade dough when this low carb option is this easy!
- Spaghetti squash
- Pizza sauce (sugar-free)
- Shredded mozzarella cheese
- Small nitrite-free pepperoni rounds
- Grated Parmesan or Locatelli for serving optional
- Crushed red pepper flakes for serving optional
How To Make Low Carb Pizza
It’s simple — you bake (in advance is fine!) or microwave the squash, mix the “spaghetti” with pizza sauce, top with shredded mozzarella and pepperoni and broil until the cheese is melted and starting to brown. Don’t believe it’s really that simple? See for yourself.
- Move oven rack to high position (if Broiler is at the top). Preheat oven to Broil. Line a baking sheet with tin foil and set each cooked squash half (cut side up) on a baking sheet. Use a fork to gently scrape the squash into spaghetti-like strands.
- Use 1/2 cup pizza sauce per squash half (you may need more if your squash is on the large side) and mix in until most of the spaghetti strands are coated. Sprinkle 1/2 cup shredded mozzarella per squash half (again, you may need more based on squash size) and top with pepperoni rounds.
- Place the baking sheet into the broiler and broil 3 to 6 minutes until cheese is melted and starting to brown. Broil time will be affected by the type of broiler you have (low or high) so watch it carefully the first time so they don’t burn.
- Remove, allow to cool for 5 minutes, serve with grated Parmesan and crushed red pepper flakes on the side and Enjoy!
Serve with a quick green salad and make everyone happy!
Do I Have To Use Spaghetti Squash?
No, you don’t have to use spaghetti squash to still make this low carb pizza recipe. I will say though, that I favor Spaghetti Squash for this because you can mix the “spaghetti” with the pizza sauce before you add the cheese and pepperoni which adds so much flavor and keeps the squash from getting dry!
With that being said, there are still plenty of spaghetti squash alternatives that can be used for this recipe.
Here are some of my favorites.
- Summer squash
- Acorn squash
- Winter squash
- Butternut squash
- Zucchini squash
- Delicia squash
More Topping Ideas For Low Carb Pizza
The cheese and pepperoni combo is a classic, and a staple in our house, but you don’t have to be limited to just those toppings. You can really make this recipe your own and get creative with whatever toppings you like.
Try it with sausage, or bacon instead of pepperoni. Or for a meat-lovers spin, use all three. If you’re on more of a veggie kick try bell peppers, olives, and artichoke hearts.
Those are just a few ideas I have off the top of my head, so feel free to let me know any more fun ways to customize a pizza!

This is my first time I had spaghetti squash even as a pizza boat. I did it minus the pepperoni. But somehow my cheese didn’t melt, whether I use high or low on broil for five minutes. What did I do wrong?
EverydayMaven says
Hi Kristen! That must have been frustrating. Did you use low fat cheese by any chance?

These look so tasty with the golden brown color in the cheese like pizza should have! Plus, it’s great that it is gluten free, so that means I can make it for my brother. He has been looking at ways to make different versions of pizza and he would probably enjoy this one.
