This easy Italian Sausage Sheet Pan Dinner is loaded with paprika potatoes and crispy broccoli. An easy, gluten-free, Whole30 friendly weeknight meal!
This was bound to happen. You know I have a thing with paprika and my new obsession is sheet-pan dinners so it was only a matter of time that I combined the two.
This easy sausage sheet pan dinner is going to be your new jam. Trust me, if you like food with flavor, you want to make this for dinner TONIGHT.
It’s obviously easy – one sheet pan – and ridiculously good. Plus, it’s Whole30 compliant (as long as you watch the ingredients on the sausage you buy!), gluten-free, and mostly hands-off. #weeknightdinnersmadeeasy
Let’s get into it.
Sausage Sheet Pan Ingredients
- Russet potatoes
- Broccoli
- Italian Sausage
- EVOO
- Dried Spices (paprika, parsley, coriander, salt)
You can make this with either Chicken or Pork Italian Sausage and if you like a kick and want this a bit spicier, go with hot sausage over mild. I have been making it with mild sausage because my kids are not down with the spicy sausage.
The potato wedges have that awesome crispy outside.
The broccoli spears bake until they have nice brown edges on the florets. Add in the sliced sausage and its perfection!
The only complaint I got the first time I made this for the family was that I didn’t make enough. This dish can easily feed two to three people or if you have a big eater like my husband – safely assume two.
It disappeared so fast. I highly recommend doubling this recipe and making two sheet pans so you have leftovers!
Recipe Tips
- You can use Chicken or Pork Italian Sausage. Go for Spicy sausage if you want an extra kick!
- Make sure to buy a whole head of broccoli so you can cut it into spears. If you use broccoli florets, you won’t get the same result.
- If you want to use smoked paprika in place of regular paprika, I recommend decreasing the amount!

- 1 pound russet potatoes scrubbed and cut into spears
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon paprika
- 2 teaspoons dried parsley
- 1 teaspoon ground coriander
- 1/2 teaspoon kosher salt
- 1 pound broccoli head cut into spears
- 2 Tablespoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 12 ounces Italian Sausage cut on the bias

Preheat oven to 425F and grab a sheetpan.

Scrub potatoes and cut into wedges. I cut each potato into 8 pieces but it will depend on the size and shape of your potatoes.

In a mixing bowl, combine potato wedges, olive oil, paprika, dried parsley, ground coriander and salt. Toss until well coated.

Spread wedges out on baking sheet making sure that there is room around each one and a flat side is down on the baking sheet.

Pop into the oven and set a timer for 30 minutes.

While the potatoes are cooking, prepare the remaining ingredients.

Trim broccoli stalks to leave about 3" and cut into spears.

Toss broccoli spears in mixing bowl and add olive oil and salt. Toss and set aside.

Slice sausage on the bias into 1/4" thick pieces.

When timer is up for potatoes, remove from oven and use a tongs to flip each potato.

Carefully add the broccoli spears and sausage pieces. Try to get each piece flat so that they are not over-lapping.

Return to the oven and bake an additional 20 to 25 minutes or until broccoli edges are beginning to brown and potatoes have crispy edges.

Remove, serve and Enjoy!

Budget dinner for us, We used Italian hot pork sausages, and regular sweet Italian pork sausages (1.99 a pound). We left them whole,we did slice the potatoes(5 pounds for 99 cents) as described. We started off the dinner , with the sausage and potatoes at the same time , then we turned the sausages and potatoes, added in the broccoli (huge head.96 per pound) and added in some sliced onions (.34 cents per pound) , simple, easy, tasty & cheap. Loaf of Italian bread was 99 cents. Washed it down with diet coke ( 2lt 99 cents). Dessert was apple turnovers 4 for $2 dollars we ate 2 of em, washed that down with cup of coffee each. Figured it was about 8 bucks total for a great dinner. We map out our dinners with what ever is on sale during the week.

This is one of our family favorites. I usually use the raw sausage I can get from the meat counter and start it with the potatoes comes out great!

Made this tonight. I have a big eater so I did one pan just poatoes and one pan sausage (hot chicken sausage) and apples and mixed veggies! SO good. My first time trying sheet pan dinner, and it was a success at my house! Didn’t follow exactly, added lots of fresh veggies. However I followed for the seasonings for the potatoes-I LOVE paprika!
