Watercress Salad with Fennel and Avocado

This Cleansing Watercress Salad with Fennel, Avocado and Watermelon Radish is so EASY to make and impressive to look at. A perfect Low Carb Gluten Free meal! Made in partnership with  the Xfinity Mobile Phone Cleanse.

When it comes to cleansing or detox, we usually think about food or our bodies.

Those definitely matter and are important to focus on but in this digital technology age, we need to also include digital detoxes.

7-day Phone Cleanse

Xfinity Mobile asked me to complete their 7-day Phone Cleanse and think more purposefully about my OWN relationship with my phone.

I know I am guilty of:

  • grabbing my phone to check notifications as soon as I wake up.
  • mindlessly scrolling when I can’t sleep.
  • checking my phone waaaayyyyy too much in general!

Before we get to my thoughts on completing the 7-day Phone Cleanse, I want to share more about this recipe I created to go with it.

Watercress Salad with Fennel, Avocado and Watermelon Radish, finished with a light lemon dressing.

Naturally Gluten Free, Low Carb and Vegan, this is an excellent lunch or light dinner.

You could easily add some grilled chicken or even better, some grilled shrimp or grilled salmon! Either way, this is a cleansing salad loaded with nutrient-dense ingredients that support natural detox of the body.

There are seven unique challenges during the Xfinity Mobile Phone Cleanse. P.S. The cleanse is FREE (here is a link to challenge yourself).

The ones that I felt most impacted by were Day One (The App Purge), Day Three (The 24-Hour Notification Fast), and Day Six (Sleep Separation).

These challenges really changed the way I am relating to my phone.

I cleared off a bunch of apps that were really just weighing my phone down. Apps I barely used and were really just distractions and clutter.

Changing the way I receive notifications really impacted how often I check my phone and set me on a great path for more mindful phone use moving forward!

Finally, the Sleep Separation challenge was a game-changer. I used to sleep with my phone on my nightstand and grab it as soon as I woke up. I have changed those habits and am way more comfortable with my sleep / morning relationship with my phone.

I highly recommend you give it a try and Thank You to Xfinity Mobile for asking me to complete this challenge and share it with you – it was REALLY eye-opening!

This Cleansing Watercress Salad with Fennel, Avocado and Watermelon Radish is so EASY to make and impressive to look at. A perfect Low Carb Gluten Free meal!

Ingredients
DRESSING:
  • 2 T extra virgin olive oil
  • 1 T lemon juice
  • pinch kosher salt
  • pinch freshly ground black pepper
SALAD:
  • 1 small fennel bulb very thinly sliced
  • 1 bunch watercress thick stems removed
  • 1 medium avocado pitted and thinly sliced
  • 1 small watermelon radish peeled, thinly sliced and quarterd
Instructions
  1. Combine olive oil, lemon juice, salt and pepper in a small bowl and whisk until well combined. Set aside.

  2. Toss sliced fennel, watercress, avocado and watermelon radish in a large mixing bowl. Add dressing and gently toss to coat.

    Serve immediately and Enjoy!
