Microwave cakes, also known as Mug Cakes are the best single-serving dessert out there. They take just minutes to whip up and satisfy your sweet tooth while controlling your portion.
This Maple Microwave Cake with shaved chocolate is perfection.
I’ve been tweaking and playing around with my very popular vanilla mug cake recipe to create more drool-worthy mug cake variations and this one is ridiculously good!
It’s light, fluffy and perfectly moist. It legit tastes like a slice of cake. But, in this case, it’s also naturally gluten free, grain free and nut free and ready in under 3 minutes.

MAPLE MICROWAVE CAKE INGREDIENTS

- Coconut Flour
- Gluten-Free Baking Powder (this one is also corn free!)
- Sea Salt
- pure Maple Syrup
- Butter. Ghee or Virgin Coconut Oil (for Paleo Mug Cake)
- Pure Vanilla Extract
- Egg
- Your Favorite Chocolate Bar
I do recommend using real pastured butter here to get the best flavor and texture. I have tested this with both Ghee and organic virgin coconut oil. It’s totally doable but in all honesty, the butter flavor is better with the maple syrup.
MICROWAVE CAKE TIPS:
- Microwave ovens vary and can significantly impact the cooking time. For reference, ours is 1000 Watts and 2 min is perfect. Start slow and keep adding time to figure out the perfect formula for your microwave.
- Believe it or not, the type of mug you use can also impact the cooking time as material and thickness impact the transfer of heat. So once you find a perfect mug/cooking time formula, stick with it so you can ensure consistent results.
- I have had a few readers email me and tell me that low carb maple syrup works really well but I haven’t personally tried it!
- You can prepare the shaved chocolate ahead of time (directions in the recipe card) and store in the freezer.

- 4 teaspoons coconut flour
- 1/4 teaspoon GF baking powder
- 1 pinch finely ground sea salt
- 2 Tablespoons pure maple syrup divided
- 1.5 Tablespoons pastured butter melted
- 1/4 teaspoon pure vanilla extract
- 1 large egg
- 1/2 tsp shaved chocolate

Grab a vegetable peeler and your favorite chocolate bar.
Drag the peeler down the long side of the bar with some pressure to make shavings.
I like to shave at least half of the bar as the middle is where the toffee is. Gently place the shavings in a container and store in the freezer until ready to use.

Combine coconut flour, baking powder and sea salt in a measuring cup or mixing bowl. Whisk to blend.

Add 1 tablespoon of the maple syrup, melted butter, vanilla and egg. Whisk until well combined and smooth.

Pour batter into a microwave-safe mug. Microwave for 2 minutes. Allow to cool for 30 seconds to 1 minute.

Pour remaining 1 T maple syrup over the top of the cake. Top with shaved chocolate bar and Enjoy!

First time, omg! Absolutely love this recipe, light fluffy (what we all want, right!) in 2x 30 seconds plus 1x 20 seconds in my microwave with 1.5 T Avocado oil, instead of butter…no words nope gotta try it yourself!
