Today is all about cutting corners and keeping it healthy. I know I talked a bit about it a few weeks ago, but my husband has been traveling A LOT for work (more than ever before) and I have really been struggling to “do it all”.
Also, ALL THE RESPECT to single Mom’s – that shiz is no joke.
Anyway, getting dinner on the table has been hard and getting a healthy dinner on the table has been even harder. So, when Fred Meyer asked me if I wanted to try their new Meal Kits — Prep & Pared — I literally jumped at the chance.
I tried four (there are currently 8 recipes) different kits but decided to feature the Lemon-Glazed Flat Iron Steak with Roasted Vegetables because it’s one of the Gluten Free options, it’s loaded with vegetables, colorful, tastes great and is an easy and delish dinner in 20 minutes.
The ingredients come already prepped and prepared. All of the kits are designed to be on the table in 20 minutes or under and my experience with all four kits I tried was exactly that.
I LOVE that the veggies and ingredients were mostly prepped (exception was an avocado in another kit that wasn’t cut yet but that makes a lot of sense because avocados are temperamental and hate fresh air).
This really stands out from the many other meal kit options out there.
Most of the ones that I have tried (and I’ve tried them ALL lol), you still have to do soooo much prep work. Plus, you have to order those in the mail and plan in advance.
With these kits, you can just pop over to Fred Meyer on your way home and pick up whatever you are in the mood for.
Then come home, assemble / cook and viola, you have a healthy dinner on the table made with real food!
