Vegan Peanut Butter Freezer Fudge. 5 Ingredient Peanut Butter Fudge made with pure Maple Syrup and Organic Virgin Coconut Oil. A healthy frozen treat!
You guys. It has been SO HOT here. I know that most of the country is hot, so you feel me right? Seattle isn’t usually hot like this in the summer and most people don’t have air-conditioning. I know I’ve harped about the air-conditioning issue no less than 71957 times.
Good news is that our new house is in the suburbs surrounded by huge, old trees. It’s an easy 10 degrees cooler than our old house. Which is awesome. But, it’s still pretty freaking hot.
Some of the ways we are dealing with the oppressive heat are walks in the woods, kicking it in our kiddie pool and this Vegan Peanut Butter Freezer Fudge. Luckily, we live very close to multiple old-growth parks, which makes walks in the woods relatively convenient.
Although I have been working hard to find us walking paths so we can bring our stroller. Little man is walking but he gets tired, and carrying around an almost 30 pound 18-month old is not my jam.
I’ve been working with Adams Peanut Butter this summer and they generously sent me dozens and dozens of coupons for free peanut butter to share with friends and family.
I’ve given out a lot at this point and I also keep a stash in my purse. Whenever I am food shopping and see someone shopping for peanut butter, I either give them some coupons directly or discreetly put them on top of the jars as a little surprise.
Yesterday I decided to take it a step further and wrote a little note. I placed it into one of my empty jars along with $50 worth of coupons and set it on a bench at a well-trafficked park during one of our woods walks.
My note basically said “Pay It Forward”. You either found this jar because you need it or because you need to pass it on. Take what you need and keep paying it forward. I hope this small act inspires the person(s) who found it to do something nice for someone else. Plus, everyone gets some delicious PNW peanut butter out of the deal.
Then they will hopefully Google “Vegan Peanut Butter Fudge” and use their new PB to make this recipe.
But, if you have creamy PB in the house, make a batch and pop it in the freezer! If it’s even close to as hot as it is here, you will appreciate it later!

- 1 cup Adams Organic Creamy Salted Peanut Butter
- 1 cup organic virgin coconut oil
- 1/4 cup pure Maple syrup
- 2 T non-dairy milk
- 1 teaspoon pure vanilla extract
- pinch finely ground sea salt
- Melt coconut oil. Combine all ingredients in a mixing bowl and whisk until well combined.
- Transfer to a silicone mold or glass baking dish. I used a loaf pan to get a thicker, more fudge-like layer.
- Pop in the freezer and allow to set for at least 2 hours.
- Cut into 1" x 1" squares and keep stored in the freezer. Enjoy anytime!
