First let’s talk about Lavash Wraps. Do you live near a Trader Joe’s?
If so, you are in business! Trader Joe’s sells the most amazing whole wheat Lavash Wraps. Not only are they inexpensive, but there isn’t anything funky baked in.
If not, don’t despair – there are many other great brands of Lavash out there. Just look for one that is as natural as possible without any weird additives or preservatives. If you want to try your hand at baking a batch, The Seattle Times posted an Armenian version this week.
This recipe isn’t anything fancy, but it is just so tasty, I just had to share!
Pair with a green salad or some cut up veggies and these Hummus Feta Lavash Wraps make a fantastic lunch or light dinner. These sandwiches also travel incredibly well, so I always pack some version of them for day and road trips.
NOTES:
- This Instant Pot Hummus is an easy and delicious no-soak hummus recipe!
- If you want a Vegan version, omit the cheese and use 10 to 12 pitted Kalamata olives. I usually slice the olives in half so there is more olive per bite!

Hummus Lavash Wraps
- 1 whole-wheat Lavash Bread
- 4 to 5 tablespoons hummus
- 1 to 2 roasted peppers
- 2 ounces feta cheese see Notes for vegan version with olives
- 1/2 small cucumber thinly sliced
- fresh mint leaves
- baby spinach or spring mix
- freshly ground black pepper
- sprinkle za'atar

Start by placing your Lavash on a work surface. Spoon hummus onto Lavash and evenly spread.

Sprinkle za'atar and freshly ground black pepper over the hummus. Evenly distribute mint leaves, feta (or olives if Vegan) and cucumber slices. Finish with greens.

Gently roll up pushing ingredients down a bit to make the wrap as tight as possible.

Cut in half, serve and Enjoy!

That’s my kind of lunch. I like any excuse to use za’atar (or dukkah for that matter). Maybe some vegan ricotta with added lemon zest for extra smooshiness?
Me too Kellie! I have never used Dukkah yet but I have a recipe for it clipped to my “to make” list! I am thinking of rolling chicken in it and baking or grilling.

Love Trader Joe’s lavash. Just spotted a version at Fresh & Easy that is half the size so they’re perfect when you want to make a single wrap. Haven’t tried them yet. Plan on picking up a pack to try this yummy looking sandwich with your lighter in PointsPlus hummus 🙂

This sounds very tasty indeed. I have often wondered how whole wheat flatbreads are made because they are so hard to do at home! Sigh.
They are time consuming. Truthfully, I just find it easier to buy them. They also freeze well!
Can I freeze them in the al package or do I need to put something in between each slice? Thanks!

I make a lavash pizza using organic pizza sauce vegan cheese peppers olives hot peppers onions and bake it is so good. I am not sure my lavash bread is vegan though. I bought it at giant food in pa. I am trying to do vegan as much as possible

I do too Amy – I use them so many different ways! Have you ever baked them and made crackers out of them. Soooooo good 🙂 Another way you would love is spread with nut butter, sliced bananas, sliced almonds and a sprinkle of cinnamon. Roll up and cut into pinwheels. Easy Dessert!
I’ve been meaning to bake them and make crackers but wasn’t sure at what temp and for how long, should have known to check with you!! Help please! 🙂
Sydney takes half a lavash with a tbsp on almond butter rolled around a banana for lunch. Sometimes I leave it as a roll sometimes I slice it and make pinwheels but the almonds and cinnamon addition as a dessert sound fantastic!!! YUM!
Crackers: I usually take a pizza cutter and cut even strips then lightly spray with olive oil (from a mister) on both sides. Sprinkle with a touch of sea salt, some spices (depending on what flavor you want) and bake (single layer) for 10 to 12 at 400F. Every oven is different so watch the first batch really carefully!
