Blackberry Thyme Scones. Grain, Gluten and Dairy free scones made with ripe blackberries and fresh thyme. Low in sweetener and free from refined sugar!!
The PNW is the place to be in the summer. I am not sure it gets much better. Long, sunny days with very little rain (it’s actually drier here in July than in Arizona), abundant local produce and minimal bugs.
One of the best parts of our new house is all of the outdoor space and we are taking full advantage of it. I was just talking to my cousin who lives in PA and remarking that it’s such a change from what we grew up with there because here in the Seattle area, you can use your outdoor space all day and night. There are no vicious mosquitoes and ticks waiting to attack. It’s freaking awesome. AWESOME.
And, it’s blackberry season. That means wild blackberry bushes everywhere. We bring a little container every single time we go for a walk and collect blackberries. No Joke. Did I mention it’s awesome here? You can see that Fergie agrees.
Anyway, last year during blackberry season, I started making these Blackberry Thyme Scones. They are super easy and totally grain, gluten and dairy free. Don’t feel like you need to forage for your own PNW wild blackberries. Any in-season, flash-frozen blackberries will work and be amazing.
Once we got the lower deck all set up with our new patio furniture from Fred Meyer, we made a batch of these scones along with a pot of good coffee and sat and enjoyed them as a family. It was the perfect way to sort of christen and break in the new outdoor living space and I’m super excited to finally share the recipe with you too!

NOTES:
- Most baking powders contain corn so if you are 100% grain free, look for (or order) this brand. It is gluten and grain free.

Blackberry Thyme Scones. Grain, Gluten and Dairy free scones made with ripe blackberries and fresh thyme. Low in sweetener and free from refined sugar!!
- 2 cups blanched almond flour
- 1/3 cup arrowroot flour
- 1/3 cup coconut palm sugar
- 2 teaspoons baking powder see NOTES for grain free
- 1/2 teaspoon finely ground sea salt
- 1 large egg
- 1/4 cup melted organic virgin coconut oil
- 1 teaspoon pure vanilla extract
- 1 teaspoon fresh thyme leaves
- 1 teaspoon lemon zest
- 2/3 cup frozen blackberries

Preheat oven to 350F. Line a baking sheet with a Silpat or parchment paper and set aside.

In the bowl of a food processor, combine almond flour, arrowroot flour, palm sugar, baking powder and sea salt. Pulse to remove any lumps.

Add egg, melted coconut oil, vanilla, thyme leaves and lemon zest. Pulse until combined and dough begins to form a ball.

Remove dough to baking sheet and gently fold in frozen berries.

You want to work as quickly as you can so the berries do not begin to thaw and bleed all over your dough.

Press down to flatten dough, use a sharp knife to cut into eight triangles and separate so the sides can brown.

Bake for 25 minutes or until edges are nice and brown but not burnt.

Remove scones to an elevated cooling rack and allow to cool completely before serving.

Awesome way to use the blackberries. My kids are lactose intolerant and I am so glad to find out this dairy free, gluten free recipe. I am running to my garden to grab all those blackberries and I am going to try this recipe for sure.
