Be excited, be very excited – this is a killer cocktail!

For me though, this is more than just a drink. This is the last drink I shared in person with seven of my very best girlfriends. I haven’t seen them since last Fall. Living on opposite sides of the country is really putting a damper on our girls nights out let me tell you! This drink reminds me of how amazing my girlfriends are, how much I miss them and how much I am looking forward to seeing them all again in just another month or so.

If you live in or near Philadelphia, PA, you need to head over to the bar at Milkboy Philly as fast as you possibly can, cozy up and order a Skinny Colada. Or a pitcher because let’s be honest – one isn’t going to cut it, especially when you taste how good it is.

Now, if you are like me and don’t live anywhere near there – make your shopping list and head over to the store ASAP! Three ingredients are all it takes.

We didn’t even talk about the fact that this is a “Skinny” cocktail yet- 5 Points Plus per serving. A regular Pina Colada is upwards of 10 Points Plus Per Serving. If you follow Weight Watchers, budget 15 of your weekly points for these Skinny Coladas because we all know you are not just having one!

NOTES:

Just for comparison sake for those of you who don’t follow Weight Watchers Points Plus or aren’t familiar with the Points values – a 5-ounce glass of red or white wine is 4 Points Plus. An ounce of most clear alcohol is 4 Points Plus. You get where I am going with this right? Mixed drinks are by nature very high in Points Plus values and can really suck up your Points budget. Which makes this even more special than it already is 😉

The Skinny Colada. Skinny Rum Cocktail.

Ingredients
  • 1.5 ounces Malibu Coconut Rum
  • 1 ounce organic pineapple juice
  • 4 ounces coconut water I like Vita Coco
Instructions
  1. Fill a cocktail shaker with ice. Combine Rum and pineapple juice and shake vigorously.
  2. Pour coconut water into a skinny glass (pun intended) and top with pineapple-rum mixture.
  3. Enjoy Responsibly!

    I love Skinny Coladas! Milk Boy, Philadelphia has a great one but they Don Q Coco which is AMAZING and by far my favorite coconut rum!

        I make mine with captain Morgan and seive it through coconut husk this makes it extra yummy and I suffer from gout

        Also Try 80% vanilla almond milk and 10%Malibu rum and 10% ice and blend. Yum

      So do I! My wedding cake was Triple Coconut (got married in Hawaii), coconut cake, coconut icing and fresh shaved and toasted coconut all around the layers. I am coming up on my 4th wedding anniversary and I still dream about how amazing that cake was!

    If there’s one thing I hate, it’s having to give up points for drinks. Total waste if you ask me, especially when mixed drinks don’t always even taste that good. These look SO worth it, though!
