Dairy Free Peach Walnut Ice Cream with Honey. A creamy and chunky dairy free ice cream that scoops easily and is free of ice crystals!
I finally broke down and bought an Ice Cream Maker. I’ve wanted one for years but could never justify the cost, need or make the space for it.
Well, welcome to the suburbs. LOL. Where you shop at Costco and buy enough paper products for a small village (even though it’s only 2.5 miles from your house) and have enough room to store things like an ice cream maker.
You know what? This thing is pretty awesome. I’ve been experimenting with it and I have to say – we LOVE it.
I’ve been mostly playing around with non-dairy ice cream bases. If you have ever tried to make a non-dairy ice cream, then you know that there are some common issues that are difficult to overcome: Ice crystals, ice cream that is too hard and you have to let sit before you can scoop it and every single flavor tasting like coconut.
I am proud to say that this Peach Walnut Ice Cream with Honey doesn’t have any of those problems!
It’s creamy and luscious, free of ice crystals, tastes like Peach and Walnut with Honey and you can scoop it immediately!
There are egg yolks and nuts so for those with allergies, you could probably omit the nuts but they add a lot of flavor. As for the eggs, well, I need to do more testing. When you omit the eggs, you wind up with some of the exact issues I worked hard to avoid.

NOTES:
- I have this 1.5 Quart Ice Cream Maker.
- You have to plan ahead to make this so if you are making for a specific event, dinner or other occasion, I recommend making it the day before so it is all set up and ready to go.
- Get the ripest, sweetest peaches you can find!
- Start with 1/2 cup of honey and taste. You will need to adjust depending on how sweet your peaches are.
- This doesn’t taste like coconut.
- If you tolerate dairy, you can substitute heavy cream for the coconut cream and whole milk for the coconut milk.

Dairy Free Peach Walnut Ice Cream with Honey. A creamy and chunky dairy free ice cream that scoops easily and is free of ice crystals!
- Ice Cream Maker
- 2 cups coconut cream
- 1 cup full fat canned coconut milk
- 1/4 teaspoon finely ground sea salt
- 1/2 to 3/4 cup honey depending on sweetness of peaches
- 2 large ripe peaches pitted and quartered (about 1 pound)
- 3 large egg yolks
- 1 teaspoon lemon juice
- 3/4 teaspoon pure Vanilla extract
- 1 large ripe peach pit removed and diced
- 1/2 cup chopped walnuts

If you haven't already done so, make sure your ice cream maker insert is completely frozen. As a general rule, I just keep mine in the back of the freezer so it's ready to go at any time!

Combine the coconut cream, coconut milk, sea salt, honey and quartered peaches into a blender. Process until completely smooth.

Transfer mixture to a medium saucepan and set over medium low heat.

Separate the egg yolks from the whites and reserve the whites for another use (add to an omelette!)

As soon as ice cream base begins to bubble, whisk in egg yolks, one at a time.

Continuously whisk mixture over medium low heat for 5 minutes, until it begins to thicken.

Remove from heat and tranfer ice cream base to another dish or bowl. Mix in lemon juice and vanilla extract and stir to combine.

Set the ice cream base in the refrigerator for at least 2 hours or up to 24. You want it to be completely chilled.

Once chilled, pour mixture into ice cream machine. Set a timer for 15 minutes.

While ice cream base is churning, dice up remaining peach and walnuts.

While ice cream maker is still running, add diced peaches and walnuts and allow to churn an additional 5 minutes or until desired thickness.

You could serve the ice cream right away but it will be more like soft-serve and melt VERY quickly. It really needs time to set. Transfer to a loaf pan or other container and chill for 2 hours before serving. Once set, it is immediatley scoopable and can be served in a cup or on a cone!

I have been trying to make ice cream that is just right in our ice cream maker too! I’ve worked out the ice crystals and hardness issues, but still too coconutty. Do you think the eggs make it taste less so, or do they just help with consistency? If you do more testing without eggs, let us know!

Hi Susan! So far, no luck without eggs. I think it’s the combo of eggs and honey that gives this it’s “ice cream” texture. That, and taking the time to make a thick custard instead of just mixing ingredients together and tossing into an ice cream machine. I do plan to work on an egg-free recipe at some point so I will keep you posted!

Man ice cream is my biggest after dinner weakness and diary absolutely destroys my stomach every time.
I’m wondering if I can make this in the kitchen aide mixer with the ice cream attachment?
