Green Piña Colada Popsicles are a healthy and refreshing popsicle loaded with fresh spinach! Vegetarian but can be made vegan with a simple substitution!
Are you ready for popsicles? I hope so because I’m diving head first into warm weather food. It’s been a LONG winter here in Seattle. Grey, rainy, minimal sunshine. All the things that people typically say about Seattle – this winter lived up to it. #notafan
We had a few days of warm sunshine last week and started grilling, cleaning up our patio furniture, busting out all the pillows and of course, making popsicles.
My kids LOVE popsicles. It’s such an easy way to have a healthy frozen treat on hand for them and truth be told, you can make decent popsicles out of almost any leftover smoothie.
These Green Piña Colada Popsicles are based on my Piña Colada smoothie recipe and tweaked just a bit to add some fresh organic baby spinach. The green color is fun for the kids and you do not taste the spinach at all.
I use honey as a sweetener but if you want to keep these vegan, you could use agave, simple syrup made from palm sugar or even monkfruit for a sugar-free option.

- 3/4 cup canned full fat coconut milk
- 3/4 cup water
- 2 teaspoons lime juice
- 1 T raw honey
- pinch salt
- 1 1/2 ounces organic baby spinach
- 1 1/2 cups pineapple pieces
- 1 large ripe banana, cut into chunks
- Combine all ingredients in the order listed in a blender. Process until completely smooth and pour into popsicle molds.
