Since Fall is officially here, I thought it was about time I shared one of my favorite go-to desserts. This dessert has it all: it’s easy, healthy, perfect for infants, for toddlers, and even for dinner parties!
If you have a Slow Cooker, this Compote is about to become your best friend.
A batch makes 12 huge servings (at 3 Points Plus per serving, by the way), freezes great and is so versatile. See below for some of my serving suggestions. There are seriously endless ways to use this – I would love to hear some of yours on my Facebook Fan Page!
If you can not find Brown Rice Syrup, you can substitute Honey (ONLY for babies over one year), Brown Sugar or Agave.
- 4 pounds apples (Granny Smith, Rome, or Jonagold), peeled, cored and diced
- 1 to 2 pounds pears (Bartlett), peeled, cored and diced
- 2 tablespoons Brown Rice Syrup (or honey)
- 1 teaspoon ground cinnamon
- ⅛ cup organic Apple Juice, Pear Juice, or water
- 1 teaspoon vanilla extract
- Peel, core and cut apples and pears into small pieces (approximately ¼” thick). I like to use an apple cutter to quickly core and section the apples. Saves me a lot of time and all I have to do is quickly cut the apple sections into evenly sized pieces. As for the pears, I just use a knife to cut the pear into sections, leaving behind the core, top and base.
- Place in crockpot along with juice, cinnamon, and brown rice syrup.
- Cover and cook on low for 4 hours.
- When cooking time is up, add vanilla extract and stir.
- Can be served both Hot and Cold.
Use a fork to further crush the soft apples and pears into a smooth, applesauce-like texture.
Serve with crushed Graham Crackers on top, mixed in with yogurt, oatmeal, spread on toast, pancakes, waffles, or just by itself!
Any of the above or serve hot in mini-pastry crusts with a small scoop of Vanilla Bean Ice Cream and top with raw walnuts. Perfect way to end a Dinner Party!
