These Sugar Free Vitamin C Gummy Bears are the perfect way to give your immune system a boost during sick season. Perfect for little and big kids alike!
Pour juice into a small saucepan. Heat until almost boiling. You do NOT want to bring the juice to a boil or it will ruin the gelatin and won't set properly.
Whisk in the monkfruit powder and lemon juice until completely dissolved.
Remove from heat and slowly whisk in the gelatin until completely dissolved.
Add in Vitamin C powder and whisk until well mixed.
Work quickly to transfer the mixture to the gummy molds. I recommend placing the molds on a baking sheet that fits in your fridge or freezer BEFORE filling them so that they are easier to transfer.
Once filled, move the molds to the fridge (for at least 2 to 3 hours) or to the freezer (for at least 1 hour).
Once set, remove and pop out of the molds. Store in an airtight glass jar with a lid for up to a week.
An individual serving is 10 gummy bears. Enjoy!
