  • 1 cup Adams Natural Peanut Butter Creamy
  • 6 tablespoons raw honey
  • 1/4 cup coconut flour
  • 1/4 teaspoon pure vanilla extract
  • pinch finely ground sea salt
  • 1/2 cup finely chopped roasted peanuts
  1. Begin by finely chopping the roasted peanuts. These are for the coating. Once finely chopped, set aside.
  2. In a mixing bowl, combine creamy peanut butter, honey, coconut flour, vanilla and salt. Mix until well combined.
  3. Use a small cookie scoop OR a 1/2 T measure to form the dough into balls and place on a lined (silpat, parchment or wax paper) baking sheet.
  4. Roll each truffle through the chopped peanut mixture until well coated. Return to the baking sheet and set in the refrigerator for 45 minutes (or longer) to set.
  5. Once set, transfer to a covered storage container and store in the fridge. Enjoy!
