Weight Watchers Maple Glazed Carrots with Cardamom

  • 1 pound organic carrots
  • 1 tablespoon coconut oil
  • 1 1/2 tablespoons maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon crushed red pepper flakes
  1. Preheat oven to 400F. Line a baking sheet with tinfoil or use a Silpat as the maple syrup will caramelize and can be hard to clean off an unlined pan.
  2. Whisk coconut oil, maple syrup, salt, cardamom and red pepper flakes together.
  3. Peel carrots and lay out in one later on baking sheet. Use a pastry brush to brush oil mixture evenly over the carrots or drizzle on and roll them. Either way, just make sure they are all coated.

  4. Cook for 30 minutes. Turn and cook for another 30 minutes. Serve hot and Enjoy!
