Use Brown Sugar Bourbon to make the most delicious Shrimp Skewers! Add just a hint of pineapple juice and herbs and watch these disappear!
Finely chop green onion and cilantro leaves. Combine with remaining ingredients (except shrimp) and whisk until well mixed.
Add cleaned Shrimp into bowl and toss to coat with marinade. Cover and refrigerate for 2 to 3 hours.
Thread marinated Shrimp on skewers, leaving just a bit of space between each one so that they cook evenly. I used metal skewers, you can use wood but make sure to SOAK them for at least 30 minutes beforehand so that they don't burn while cooking.
Preheat grill to medium heat. Once hot, place skewers directly over heat for 2 minutes (so that they char a bit), turn and repeat for another 2 minutes to char the other side.
Shut off the burners on one side of the grill to create an indirect heat environment. Move skewers to that side and close lid.
Cook an additional 2 to 4 minutes until shrimp are just cooked through.
Serve and Enjoy!
