This healthy Peanut Butter and Jelly smoothie tastes like a decadent dessert but don’t be fooled!It’s made with nutritious ingredients and ready in minutes!
Considering how often I make smoothies and how many different variations, it’s actually very surprising that this is the first one I’ve posted for Everyday Maven.
So, my friend Cindy emailed me last week and invited me to participate in a little cooking competition. In celebration of National Peanut Butter & Jelly Day, which also happens to fall on Cindy’s birthday.
Who could turn down an opportunity to get creative with Peanut Butter and Jelly? Not Me! Especially since I think we use 2 to 3 containers of nut butter a week in this house.
I immediately thought of my toddler and made us a PB & J smoothie to share. He loved it! Granted, he is a really good eater but he seriously slurped this down in about two minutes and demanded mine. Which of course I did, as any mom would. But I did sneak another one in later for me and my hubby when our little guy was asleep!
I am also submitting my 2 Point Peanut Butter Cookies with Strawberry Thumbprints. They are a staple around here and an obvious choice for this Project!
- PB2 is freaking awesome for smoothies! It is all-natural, defatted peanut butter powder. I have been experimenting with it in cooking and baking but love it most for smoothies!
- When it comes to high-speed blenders, you can’t go wrong with a Vitamix or a Blendtec. I have a Blendtec and love it! If you are serious about smoothies and sauces, this is a must-have. They are expensive, so it’s a save up for a while kind of purchase. If you don’t have a high powered blender, just make sure you cut your fruit (bananas) up into small chunks before freezing and you should be good to go!

- 10 ounces unsweetened plain almond milk
- 1/8 teaspoon vanilla extract
- 2 tablespoons peanuts
- 2 tablespoons PB2
- 1.5 tablespoons strawberry preserves + 1 teaspoon I used reduced sugar
- 1 frozen banana
- 7 to 8 ice cubes
Layer ingredients (except teaspoon of preserves) in blender in order listed.
If you have a high-speed blender, use the smoothie setting.
Stir a teaspoon of strawberry preserves into glass, serve and Enjoy!
