You guys, my older son graduated from Kindergarten this week. What in the heck?! Where did the last 5 years go? No, seriously? WHERE.

OK, collecting myself.

His school is an amazing little cooperative elementary school in Seattle with lots and lots of outdoor time, a strong focus on social-emotional learning and a rich community of caring, involved parents and teachers who know every single child and love them for who they are. They do super cool stuff. Like have an indoor camping sleepover to celebrate the end of school for the Kindergarteners and 1st graders with their teachers and some parent chaperones.

My little guy is just a wee bit obsessed with marshmallows right now. So when Peanut Butter and Co. reached out to me and asked me to partner with them to develop a recipe for their new Chocolate Hazelnut Spread, Chocmeister, I saw a perfect opportunity to recreate one of my favorite childhood treats in a new way and deliver a delicious treat to the kids for their big indoor camping adventure.

These Chocmeister Chocolate Hazelnut Rice Crispy treats have only four ingredients and are no-bake. If you grew up on the classic rice crispy treats like I did, you will love this version! My son said that everyone loved the treats. Plus, he came home with an empty bag and you know kids don’t lie about dessert.

NOTES:

  • Chocmeister comes in both Milk Chocolate and Dark Chocolate and I tested this recipe with both. My son preferred the Milk Chocolate so I went with that for this recipe since it was for his friends. My husband and I really liked the Dark Chocolate so I recommend using whichever is your preference or a combo of both!
  • Junk free marshmallows can be hard to find or super expensive. I usually get them at Whole Foods but if you live near a Trader Joe’s, they just started stocking a pretty decent marshmallow for much cheaper!
  • Storage: If it’s particularly warm in your kitchen, I recommend storing in the fridge until about an hour or two before eating.

Ingredients
  • 1 cup 2 sticks unsalted butter
  • 2 10 ounce bags marshmallows
  • 1 13-ounce ar Chocmeister Milk Chocolatey Hazelnut Spread
  • 8 cups crispy rice cereal
Instructions
  1. Grease a 9x13 glass baking dish with butter and set aside.
  2. Place a large pot over medium low heat and combine butter and marshmallows. Use a spatula to stir frequently until the mixture is melted, about 6 to 8 minutes.
  3. Add Chocmeister and continue stirring into butter mixture until melted and well combined.
  4. Remove from heat and immediately stir in crispy rice cereal. Keep tossing until well coated.
  5. Pour mixture into greased baking dish and use a spatula to press down into one even layer.
  6. Loosely cover with wax paper and refrigerate for 3 to 4 hours (or longer) to set. When ready to serve, remove and cut into 24 squares. Sometimes the first square removed will crack as it releases, but the rest should come out fine. Enjoy!
