Whoa you guys. I am so not done complaining about the weather. My bright and sunny salmon from last week might look good but it did no good in conjuring us up some good weather. It’s been worse!
Seriously. So. Much. Rain. SO MUCH.
I’ve lived here for almost six years and I’ve always told people, “It doesn’t rain that much. It’s just a mist. Blah blah blah.” Well, guess what? These last few weeks have lived up to that rainy Seattle reputation. Today was so bad I even had to use an umbrella, which is super unusual for Seattle.
Anywho, I know that it’s first-world problems to be complaining about rain. And, that most of my friends and family on the East Coast are dealing with freezing temps, snow and ice so really we have it good.
But, the real truth is that I have so many good recipes and posts I want to share with you but I haven’t been able to take good photographs and that is actually what I am frustrated about.
These Chocolate Banana Paleo Protein Bars are a good example. I first made them over a month ago, tested the recipe a few times, tweaked it and planned to share it earlier this week. Do you know that I have no-joke been trying to get good photos of these bars for 7 days? That’s nuts!
Regardless of what is happening with the weather, I am really excited about these bars. They taste amazing, are naturally sweetened by soaked dates, have just a touch of dark chocolate and are loaded with protein.
You may have noticed that I pretty much never share recipes using protein powder. That is because, frankly, I hate most protein powders. They are either cakey, chalky, loaded with junk or whey or just have a horrible after-taste. Don’t even get me started on pea protein. Gag.
When Harrison, the founder of Rootz Nutrition, reached out a few months ago and offered to send me some of his paleo protein powder to try, I reluctantly said yes because the ingredients looked very clean. I figured I would hate it like all the rest and give it away.
But, you guys, I loved it! Shocker. It’s legit good and doesn’t have that crappy after-taste. I’ve been adding it to smoothies and playing around baking with it and making protein energy balls and bars. The best part is that the ingredients are on point and I feel good giving it to my kids (big deal).
I am super excited to finally have a protein powder I trust and like the taste of. As of now, it comes in only one flavor – Chocolate Banana Nut. So, I made these Chocolate Banana Paleo Protein Bars to showcase it. I hope you love them!

- 3 ounces organic banana chips, divided
- 8 ounces pitted, soaked dates
- 1/4 cup organic, virgin coconut oil
- 2 scoops Rootz Nutrition Paleo Protein-Superfood
- 2 T unsweetened cocoa powder
- 1 T coconut flour
- 1/2 teaspoon ground cinnamon
- pinch finely ground sea salt
- 1/4 teaspoon pure vanilla extract
- 4 ounces high quality dark chocolate chips
- Place 2 ounces of the banana chips in the bowl of food processor fitted with the chopping blade. Pulse until finely chopped. If your food processor is not particularly strong, you may want to roughly chop the banana chips first to speed up the process. Once chopped, remove to a small dish and set aside.
- Strain the dates from the hot soaking liquid and add to the food processor with coconut oil. Process until a smooth paste forms.
- Now, add back the chopped banana chips along with Rootz Protein Powder, cocoa powder, coconut flour, cinnamon, sea salt and vanilla extract. Process until a sticky dough has formed.
- Line a small baking dish ( I used a 2-quart Pyrex baking dish ) with parchment paper. Use your fingers to press the dough evenly into the dish.
- Melt the dark chocolate chips using the microwave or on the stove top over a double boiler. Once melted, quickly pour over the pressed dough and use a spatula to evenly spread out.
- Top with remaining banana chips and place in the refrigerator for 30 to 45 minutes or until fully set.
- Remove from dish, trim sides and cut into 12 bars. Enjoy!
