Having pre-made food in the freezer is a necessity when a brand new baby is in your life. Something that I have come to do for friends (I would say family but most of my family is on the East Coast) when they have new babies is make them something to eat – something that they can freeze and easily cook for dinner or defrost individual portions for a grab and go type of meal.
One of my favorites is a big breakfast casserole loaded with veggies and protein. For some reason, making breakfast seems the most daunting when you have a newborn. Maybe it’s because you are perpetually tired and overwhelmed and this is an easy meal to skip.
This week my mom is graciously going to be making us a bunch of freezer meals from my site. When I was putting together the list for her, I decided to share it in case you or anyone you know is having a baby soon and you want to help stock their freezer full of real-food meals to keep them healthy while they get through those first couple of months!
We will supplement this with big batches of hard-boiled eggs at the beginning of the week and make sure to have fresh, local, organic apples on hand and a big batch of Homemade Sunbutter.
LUNCH OR DINNER:
We always try to keep fresh salad ingredients on hand and things like salmon cakes and meatballs can be quickly heated up and eaten alongside a salad for a quick and healthy meal.
Paleo Weeknight Salmon Cakes frozen in individual portions
Since our baby is coming in the winter, I want to have some soups and chili on hand (all frozen in individual portions) for quick, hot lunches and dinners.
Flu Fighter Chicken Stock (just in case!)
SNACKS & OTHER FOODS:
Rosemary Mixed Nuts (in snack size bags to grab and go)
Almond Date Bites Rolled in Toasted Coconut (in the freezer)
